4 ripe avocados, pitted and sliced lengthwise
3 cups baby kale or arugula leaves
3 oranges, peeled, seeded, thinly sliced into small wedges
¼ cup feta cheese, crumbled
2 radishes, thinly sliced
½ cup pomegranate arils
2 tbsp Chosen Foods Avocado Oil (Buy it here)
Juice of ½ lemon
¼ tsp sea salt
¼ tsp black pepper
¼ tsp red chili pepper flakes
1-2 tbsp Chosen Foods Chia Seeds
1 tbsp hemp hearts
In a medium bowl, combine the greens, sliced oranges, feta, radishes, and half of the pomegranate arils. Drizzle over the avocado oil and add a squeeze of lemon juice. Season with salt, black pepper, red chili flakes, and half of each of the chia seeds and hemp hearts. Toss to coat.
Fill the avocados with the salad and place onto a serving dish. Garnish each halve with a few more pomegranate arils, a little extra chia seeds and hemp, a sprinkle of sea salt, and just before serving, finish them with a light drizzle of avocado oil. Serve immediately.
Tip: Just before filling the avocados with the salad mixture, brush some lemon juice over each halve to prevent them from oxidizing.
